El tratamiento con mayor aceptabilidad fue T1 (100% fruta + 21 °brix), el cual presentó las mejores características organolépticas ante los catadores y en cuanto a las mejores propiedades fisicoquímicas, los tratamientos T1, T2 y T6 obtuvieron los resultados esperados, por lo que se concluye que el vino del pseudofruto de marañón posee características organolépticas aceptables y presenta propiedades fisicoquímicas entre los rangos establecidos por las normativas de calidad alimentaria.</p> <p><strong>Palabras clave:</strong> marañón, vino, propiedades fisicoquímicas y sensoriales.</p> <p><strong>Abstract</strong></p> <p>In the present work has considered cashew as an optional raw material for the elaboration of wine due to its natural qualities, for this, the physicochemical and sensory properties of the cashew pseudo-fruit wine were evaluated, using analysis methods to identify the percentages of alcohol , Brix degrees, content of polyphenols and the capacity of antioxidants present in the extract of the fruit and also the levels of pH, fixed, total and volatile acidity were identified through the study of six treatments in triplicate that consisted of the combination in proportions of percentages 100%, 25/75 and 33/67 of water / fruit and levels of 21 and 8 degrees brix, the latter characteristic of the fruit.
