Se utilizaron aproximadamente (10 kg) de manzana a la que se añadió agua al (80 y 90%) del peso de la fruta. Obteniendo un rendimiento de (5.96%) para la biomasa en fermentación acética y (60.85%) en la producción principal de ácido acético, la cual se considera adecuada, ya que favorece al rendimiento del ácido acético y no precisamente a la elaboración de la biomasa, diferenciándose en este caso de la fermentación alcohólica en solo 0.3% y en el caso de la fermentación acética en 2,4% con respecto a las entradas y salidas, respectivamente. Con los resultados que se obtuvieron, se determinó que el proceso fue eficiente debido al alto porcentaje alcanzado para la producción de ácido acético, producto de interés en este estudio. En la metodología se empleó un tipo de investigación exploratoria, debido a que se indagaron los conocimientos científicos, criterios e intereses de estudios de la cinética del proceso de fermentación acética y experimental ya que se obtendrá la cinética de fermentación acética a partir de la manzana, utilizando como agentes biológicos la levadura <em>Saccharomyces</em> <em>Cerevisiae</em> y <em>Acetobacter Aceti</em>, y además de esto complementar con un método estadístico que permitió recopilar, elaborar e interpretar datos numéricos.</p> <p><strong>Palabras clave: </strong>Cinética, biomasa, acético, alcohólico, rendimiento.</p> <p><strong>Abstract</strong></p> <p>The main objective of this research work is to determine the kinetics of acetic fermentation using Acetobacter Aceti as a biological agent for the production of apple cider vinegar. Approximately (10 kg) apple was used which added water at (80 and 90%) of the weight of the fruit. Obtaining a yield of (5.96%) for biomass in acetic fermentation and (60.85%) for the production principal of acetic acid, which is considered good since it favors the production of acetic acid and not the formation of biomass, differing in the case of alcoholic fermentation by only (0.3%) and in the case of acetic fermentation by (2.4%) with respect to inputs and outputs. With these results obtained, it could be determined that the process was efficient due to the high percentage achieved for the production of acetic acid, a product of interest in this study. In the methodology, the research to be carried out will be exploratory, this is because the scientific knowledge, criteria and interest in studies of the kinetics of the acetic and experimental fermentation process will be investigated since the fermentation kinetics will be obtained.
