JA - ING VL - 6 IS - 11 SE - DO - 10.46296/ig.v6i11.0082 UR - https://journalingeniar.org/index.php/ingeniar/article/view/105 SP - 31-41 AB - <p>El propósito de la investigación fue determinar el efecto de las concentraciones de licor de cacao fino y de aroma sobre las características fisicoquímicas y sensoriales de la miel de abeja. Se aplicó un diseño mono-factorial completamente al azar (DCA). Siendo el factor en estudio concentraciones de licor de cacao al 20%,30%.40%, 50% y 60%, se obtuvo 5 tratamientos y se realizó tres repeticiones que dieron 15 unidades experimentales de 1000 gr de miel de abeja. Las variables fisicoquímicas estudiadas fueron (acidez, cenizas, contenido de sólidos solubles en agua, carbohidratos y energía total) donde se detectaron diferencias significativas entre los tratamientos en los análisis sensoriales fueron evaluados los atributos (olor, sabor, color, apariencia y aceptabilidad). Los resultados de los análisis físicos químicos evidencian que el tratamiento T<sub>1</sub> se apega en su mayoría a los parámetros que establece la normativa. En el análisis sensorial el tratamiento T<sub>4</sub> fue el escogido por los panelistas con mayores características de aceptabilidad.</p><p><strong>Palabras clave: </strong>cacao fino y de aroma, pasta de cacao, apicultura, miel.</p><p><strong>Abstract</strong></p><p>The purpose of the research was to determine the effect of the concentrations of fine cocoa liquor and aroma on the physicochemical and sensory characteristics of honey. A completely randomized monofactorial design (DCA) was applied. Being the factor under study concentrations of cocoa liquor at 20%, 30%, 40%, 50% and 60%, 5 treatments were obtained and three repetitions were carried out that gave 15 experimental units of 1000 gr of honey. The physicochemical variables studied were (acidity, ash, content of soluble solids in water, carbohydrates and total energy) where significant differences were detected between the treatments in the sensory analysis attributes (smell, taste, color, appearance and acceptability) were evaluated. The results of the physical chemical analyzes show that treatment T<sub>1</sub> adheres mostly to the parameters established by the regulations.
